If you have been following my recent recipes I have been posting you have seen that I have been trying to eat better and more cleanly. I know you probably saw the Strawberry Trifle or Banana Pudding Poke Cake and are thinking “Girl are you crazy?”, but a girl has to still have some sweets. Anyways, I have been all over Pinterest searching for clean eating recipes and when I was at the library with the kids a couple of weeks ago I started looking around and found the book Deceptively Delicious, you should see if you can find it at your local library or check it out on Amazon. When I saw the title, I thought “This is exactly what I need”. The question is can I pull this off without anyone knowing? My kids or the biggest kid of all, my husband, normally figure out something is different and without even tasting they shoot it down. The first recipe for my guinea pigs, I mean family is simply called French Toast. Sounds innocent enough right? They all like French Toast, so let’s give it a try.
Here is the list of ingredients to help me with my master plan of getting my family eating healthy whether they like it or not or even know I am doing it.
- 4 large eggs
- 2 tablespoons of banana or pineapple or sweet potato or carrot or butternut squash puree, or canned pumpkin. Getting interesting, huh? I chose sweet potato.
- 1/4 teaspoon cinnamon
- 4 slices whole-wheat bread
- Nonstick cooking spray
- 2 teaspoons trans fat free soft tub margarine spread
- Pure maple syrup, confectioner’s sugar, or fresh fruit for serving
- Flaxseed meal (optional)
In a shallow bowl, whisk the eggs, puree, and cinnamon. Add the bread slices and turn them in the mixture to soak for 30 seconds to 1 minute, if you leave it any longer it will get really soggy. You can’t even see the sweet potato puree in the picture can you?
Coat a nonstick griddle or large skillet with cooking spray and set it over medium-high heat. When the pan is hot, add the margarine.
When the margarine sizzles, add the soaked bread slices and sprinkle with flaxseed if you like and cook until golden brown on the outside, 2 to 3 minutes per side.
Yum
Serve warm with syrup, confectioner’s sugar or fruit.
So I bet you are wondering what my family thought, they loved them and could not tell that it was not my normal french toast recipe. As you can see in the picture above it looks no different than regular french toast. I have been pureeing celery, sweet potato, broccoli, all kinds of stuff while the kids are upstairs and occupied and freezing them in individual freezer bags so when I have my next experiment I just sit it out a couple of hours ahead to thaw, on top of the refrigerator of course so that no one sees it 🙂 .
