Ingredients:
¾ cup of smooth peanut butter
⅔ cup of powdered sugar
sea salt
7 ounces of vegan butter at room temperature
½ granulated sugar
1 teaspoon vanilla extract
2 teaspoons of ground flax or ground chia seeds
2 cups flour of choice
¾ cup of Dutch-processed cocoa powder
1 teaspoon each of baking powder and baking soda
¾ cup of dark chocolate chips or chunks
Steps:
- Make the peanut butter filling by combining the peanut butter, powder sugar, and a pinch of sea salt.
- Divide the mixture into about 12 bite-sized balls and place in the freezer for at least 30 minutes.
- Mix the butter, sugar, and extract until whipped and fluffy.
- Mix the chia or flax seeds with two tablespoons of water and add it to the butter mixture.
- In another bowl, combine the flour, cocoa powder, baking powders, and another pinch of salt.
- Add it to the wet ingredients before mixing in the chocolate chips.
- Divide the dough and make cookie dough balls to match the number of peanut butter balls.
- Remove the peanut butter balls from the freezer.
- Grab a cookie dough ball and press your thumb into it to create a well.
- Stick a peanut butter ball in the well and carefully wrap the cookie dough around it so no peanut butter shows.
- Do this with all the cookie dough until each piece is filled with a peanut butter ball.
- Bake for about 15 minutes at 350℉.

1 teaspoon vanilla extract
1 cup of sugar
⅓ cup unsweetened cocoa powder
½ cup AP flour
¼ teaspoon salt
¼ teaspoon baking powder
Steps:
- Preheat your oven to 350℉.
- Melt cannabutter by gently heating in the microwave at 15-second increments.
- Mix together the melted cannabutter, eggs, and vanilla extract.
- Carefully stir in the sugar, cocoa powder, flour, salt, and baking powder until fully mixed.
- Pour the mixture into a greased 8” x 8” pan and bake for 25-30 minutes.
