Dinosaur Bar-B-Que began back in 1983 as a mobile concession stand using a 55 gallon drum cut in half. After growing tired of always being on the road, Dinosaur Bar-B-Que settled down in Syracuse NY in 1988. Their bar-b-que is nationally acclaimed and their food and sauces have won honors in publications such as Men’s Health and Eating Well magazines. They were named the country’s Number One BBQ on Good Morning America and have been featured on various Food Network and Travel Channel shows. The menu is firmly rooted in the traditions of Southern bar-b-que, but there are other influences that shape their flavors and give their food its own distinctive character.
Being from the south we know good BBQ. My husband is a sauce snob whether it be for ribs or wings and he loves going to new stores to find that next great sauce. We just purchased a pit boss pellet smoker this past summer so our husband has been busy smokin whatever he can on it so when given the chance to check out the sauces and rubs from Dinosaur Bar-B-Que we jumped at the chance.
Over the past couple of months we have been putting these rubs and sauces to the test on grilled chicken breasts, chicken wings, ribs and pulled pork and the results have been absolutely amazing.
The first ingredient in the Big Action Spice Rub is Brownulated Sugar so it is a great base to get that good caramelization. We rubbed these set of ribs down and cooked them low and slow in the smoker for a few hours.
When we cook ribs we like to do one rack with sauce(front) and another rack with just the dry rub only(back). As you can see these ribs came out with excellent color and the Wango Tango Hot Habanero Sauce gave these a nice kick. Don’t let the Habanero in the name scare you, this sauce is not overly spicy and I would say could be tolerated by most.
Dusted some wings with the Cajun Foreplay rub, this rub has very little sugar so it is more spice forward, great for wings with a good punch of salt, garlic, chiles and cayenne.
The Big Action Rub was the star of the show again on the Pulled Pork. We rubbed down the Boston Butt real good, smoked it for most of the day and then as we shredded it we dusted it with the Big Action Rub and you are talkin about some amazing pork. Top this with the Sensuous Slathering Barbecue Sauce(my husbands new favorite BBQ sauce) and you have pulled pork that cannot be beaten by any local BBQ joint.
We also made some homemade baked beans with the Big Action Rub and Sensuous Slathering Sauce, put them in the smoker for a few hours under that butt that dripped rendered fat into the beans, a side dish that can’t be beat.
