Butter Cakes or Shortened Cakes –

Pound Cakes
Resembling a loaf of bread, this type of cake has its roots traced back in England. Derived from “quatre quarts” which would mean “the four quarters” in French, this cake emphasizes on the usage of its 4 main ingredients namely flour, butter, sugar and eggs in equal proportions. The use of egg makes the cake denser but not as much as the American Style butter cake. Bakers simply prefer to top this cake with a thin layer of sugar glaze rather than a thick frosting, because of its richness.
Foam Cakes
Light and fluffy, the foam cakes get its raise from eggs. While using egg whites, this type of cake is considered no less than any other heavenly dessert item in terms of it being the lightest, airiest and lowest-fat cakes. Though, having a great rise, this type of cake is not suitable for heavy frosting.
When this type of cake is made with egg whites and yolk, a sponge cake which is usually richer but quite light in weight is made. This sponge cake is very porous which makes it ideal for trifle preparation.
Cheesecakes
Other than these flour-based cakes, cheesecakes are also considered to be very popular, these days. Just like the foam cakes, this type of cake even gets its lift from eggs. Cheesecakes are found somewhat similar to baked custard which can be topped up with a layer of the creamy, buttery biscuit base along with some fruits.
