Chocolate Chip Muffins

Ingredients

  • 2 cups flour
  • 1/2 cup white sugar
  • approximately 1 Tbsp brown sugar (or to taste)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup skim milk
  • 1/3 cup oil
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips

Instructions

  1. Mix dry ingredients. Beat egg, milk, oil and vanilla in a small bowl, add to dry ingredients and stir just until moist. Fold in chocolate chips.
  2. Pour into paper-lined muffin tins. Bake at 400 for about 15 minutes, until brown and muffins test done.
