Mealtime Magic Delicious Meals in Half the Time was written by award winning cookbook author Amy Houts. The goal of the book is to save you time and money, both of which I never seem to have enough of. Since I have begun to homeschool our three children my free time is more limited than ever, but we don’t have the budget to eat out every night and I don’t want to be feeding my family a bunch of fast food anyways. I have been thinking about prepping freezer meals or prepping our meals a week at a time so this book arrived in my hands for a review at the perfect time. This book is not just a bunch of quick and easy recipes or make ahead meals, it shows you how to make new delicious meals using leftovers from the previous meal. According to Amy, families throw away an average of twenty pounds of food each month, equating to $500 a year in waste, don’t trash those leftover, use them in your next meal.
Last week we used the three day plan that mixes ground beef for for flavor and ground turkey because it is lean and healthy. So I cooked up 2 pounds of meat using the recipe provided and from that 2 pounds of meat I made burritos, an Italian Pasta Skillet Dinner and Spicy Tamale Pie. Since I used the meat from the first day meals 2 and 3 were simple because the majority of the work was done. This week we did the three day plan for meatballs. day 1 started with mixing up a batch of meatballs from 2 pounds of ground beef, night 1 we had Meatball Heroes, night 2 was a yummy Easy Lasagna and night 3 was a comfy, warm Meatball Stew.
