Weeknight Burritos
These burritos are perfect for a quick and delicious weeknight dinner and 10x better than what you get out of a yellow box. Enjoy!
Ingredients
- 1 pound ground beef or turkey
- 1 can refried beans
- 3/4 cups enchilada sauce (I used one, 15 ounce can)
- 1/4 cup water
- 1/4 cup minced onion
- 1/2 Tablespoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1 1/2 cups shredded cheese (cheddar, Mexican blend, whatever you like)
- 10 burrito-sized tortillas or smaller ones for the kiddos
- Lettuce for topping (optional)
- Sour cream for topping (optional)
- Tomatoes for topping (optional)
- Extra cheese for topping (optional)
Instructions

Brown ground beef, drain. Add remaining ingredients (except tortillas). Bring to a boil. Reduce heat, cover and simmer for 10 minutes.

Heat 3-4 tortillas at a time. Spoon 1/4-1/2 cup beef mixture down the side of each tortilla and roll up. Top burrito with lettuce, sour cream or extra cheese if desired.
